A course -Standard- (about 2.5 hours) : Soba making experience
you can make their own soba noodles, then boil, cool and eat the soba noodles.

B course -Light- (about 2 hours)
: Soba making demonstration + tasting
Here you will see a soba making demonstration (partial experience), then boil, cool and taste the soba. In total, everyone will taste 1Kg (10 servings) or 2Kg (20 servings).

C course -Plus- (about 3.5 hours)
: Soba making experience + local cuisine meal
You can make your own soba noodles, then enjoy the soba noodles with fresh meals (about 6 or 8 dishes) which are mainly harvested at local.

Steps of making SOBA
- Prepare
- Food hygiene (Cap・Apron・Wash your hand)/ Arrangement Ingredients( Buckwheat. Flour. Water)
- Sieving and Mixing
- Mix well after sieving the flour. / Make the flour uniform.
- Water and mixing
- 1st Water, Like bread crumbs / 2nd Water, Open your fingers wide / Checking the hardness,3rd Water, Grow like soybeans)
- Kneading
- To buik / Knead dough well by your body weight / Kikuneri(Bonding) / Press rolling / Shiny skin・Handpress
- Stretching
- 1st Stretching, Handpress edge and center, turn・・ / Make a disk by using rolling pin/ Pin winding press. Hands press and roll 3 or 4times after winding sheet. /Make it flatness. Pin rolling press. Make it noodles thickness.
- Folding
- With sprinkle flour, Fold 2 to 4 to 8 layers by3 times.
- Cutting
- Cutting board, Ruler, SOBA knife /Knife put on the seat, slide, down to front, tilt the knife a little.

What is the percentage of buckwheat flour?

The so-called Nihachi soba is usually made of 80% buckwheat flour and 20% wheat flour.

Where is buckwheat flour produced?

We mainly use buckwheat flour from Hokkaido, Aomori, Fukushima, Ibaraki, and Nagano.
We do not use foreign buckwheat flour.

I don’t have any soba making tools, is that okay?

You don’t need any tools as we will provide them. Please bring the items listed in the following questions.

What should I prepare on the day? (A course-Standard-・C course-Plus-)

The powder will get on your clothes, so please bring an apron and a hat to prevent hair from soba.
Also, please bring a container (approximately 24cm x 18cm) to store your soba noodles as a souvenir.
